Recipe for Blinis or Yogurt and Feta Pancakes

This is one of my specialties that I make very often for different occasions. For festive menus or when I have guests, I usually serve it in a smaller version, garnished in various ways.

Ingredients
 250 Plain stirred yogurt
 1 Egg
 1 Sugar
 1 pinch Salt
 ½ Baking soda
 1 White vinegar
 180 Flour
 150 Feta
 Cooking oil
Directions

In a mixing bowl, combine the yogurt with the egg, sugar, and salt using a spoon. Add the baking soda and pour the vinegar on top. This will cause a chemical reaction that will dissolve the baking soda. Mix well.

Add the sifted flour and mix with a spoon until you have a homogeneous dough. The dough should have a thick enough consistency to not spread when baked.

Crumble in the feta and mix well to incorporate.

Cover the dough and let it rest at room temperature for 20 minutes.

Heat a pan with 2 tablespoons of oil. Once it's hot, reduce the heat slightly (medium intensity) and drop small amounts of batter into the pan (a well-filled teaspoon of batter per blini or a tablespoon for pancake-sized portions).

Cook for a few minutes until the bottom is golden. Turn them over and cook a little longer to brown the second side.

Place on a plate with paper towels to remove excess oil.

Add more oil to the pan and continue with the rest of the batter until it is finished.

To finish, serve immediately as is or accompanied by thick cream or Greek yogurt.
