Shell the peas and cook them for 5 minutes in a large pot of boiling salted water. Drain them and place them in a bowl of ice water, then drain them again.
Peel and slice the avocados and drizzle them with lemon juice. Blend the pistachios. Crumble the cheese.
Cook the sausages according to their instructions. Divide two sausages onto each plate, then add the rest of the ingredients, drizzle with a little olive oil, and serve immediately.
