Brioche: In the bowl of a mixer (with the dough hook) or in a mixing bowl, combine the flour with the sugar.
Add an egg, mix.
Mix the warm water with the baking powder and pour the mixture into the mixing bowl. The dough should not be completely homogeneous after each step; there should be some dry flour remaining at the bottom of the bowl.
Melt the butter in a saucepan. Pour the butter into the mixing bowl. Knead until you have a smooth dough that no longer sticks to your hands or the bowl. - If you are kneading by hand, take about 15 minutes. If you are using a mixer, take about 8 minutes. Let the dough rise for 2 hours.
Compote: Roughly cut the apples and cook them in a saucepan with sugar, cinnamon, and cardamom for 15 minutes.
Shaping: Form a log with your dough. Divide the dough into 10. Make balls. Place a square of applesauce in each of the balls.
Let rise again for 20 minutes.
Place them on a baking sheet.
To finish, brush with egg yolk and bake for 8 minutes at 190°C. When you take it out of the oven, brush with butter.
