A deliciously flavored mousse with chanterelles.
Cut the cheese into cubes. Heat the milk, cream, salt, and pepper, add the cheese and let it melt.
Turn off the heat, add the agar-agar, and mix. Pour the mixture into a siphon, charge it with one or two gas cartridges (depending on the specifications of your siphon), and chill for at least 1 hour.
Wash the chanterelles and sauté them in butter. Season with salt and pepper. Cut the bread into crouton-sized pieces and toast them.
Warm the siphon in a water bath for a few minutes.
To finish, place a few mushrooms at the bottom of a deep plate, cover with the foam using a siphon, and decorate with croutons, mushrooms, and edible flowers (optional). Serve immediately.
