I share my signature recipe that everyone asks me for every time I make it: a deliciously juicy red fruit cake, perfect for summer.

Ingredients
 500 Mixed red fruits (strawberries, raspberries, blueberries, blackberries, etc.)
 150 Sugar
 200 Flour
 1 Baking powder
 3 Egg
 100 Melted butter
 1 Plain yogurt
 1 Vanilla extract
 1 pinch Salt

Maceration of the fruits Preheat the oven to 180°C. Wash and drain the red fruits. If you are using frozen fruits, make sure to thaw and drain them well. In a bowl, mix the red fruits with 50 g of sugar. Let them macerate while you prepare the dough.

Mix the eggs In a large bowl, beat the eggs with the remaining sugar (100 g) until the mixture becomes frothy.

Add the yogurt and vanilla. Add plain yogurt and vanilla extract, then mix well.

Add the butter Incorporate the melted butter, then mix again.

Adding the dry ingredients In another bowl, sift the flour with the baking powder and a pinch of salt. Gradually add this dry mixture to the wet mixture, stirring well until a smooth dough forms.

Grease and flour a cake pan. Pour half of the batter into the pan. Spread the macerated berries evenly over the batter. Cover with the remaining batter.

Baking: Bake for about 40-45 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before removing and allowing to cool completely on a rack.

Add a scoop of ice cream. Accompany it with a dollop of whipped cream or a scoop of vanilla ice cream for an additional touch of indulgence.
