A Pumpkin Pie for Halloween or a Jack O' Lantern, a fun shape to entertain the children.
Peel the pumpkin and the quinces, then cut them into small cubes. Place the pieces of quinces and pumpkin in a saucepan. Add water, sugar, cinnamon, and maple syrup, and let cook for 30 minutes. Blend everything and let cool.
Preheat your oven to 190°C. Cut a pumpkin shape from the two circles of puff pastry, one circle with the pumpkin shape and the second circle with cutouts for the eyes, nose, and mouth. I found everything online and then cut it out to make a template.
Place the puff pastry pumpkin on a baking sheet lined with parchment paper. Fill the puff pastry with pumpkin-apple compote, leaving about 1 cm all around. Brush the edges of the puff pastry with a beaten egg, then place the second circle of pastry with the Jack O' Lantern face on top.
Seal the edges. Brush everything with the beaten egg and bake for 30 minutes in a preheated oven at 190°C. Let cool and enjoy.
