An ideal recipe for an appetizer.
Preheat your oven to 180°C. Wash, dry, and finely blend the spinach leaves and set aside. Blend the salmon until quite fine. Add the sheep cheese cut into cubes and blend again. Spread the cheese and salmon mixture onto a disk of puff pastry, leaving about 2 cm all around.
Spread the chopped spinach on top. Cover with the second pastry and press the edges to seal around.
Place a small glass in the center of the dough. Cut rays around the glass to form 16 pieces. Take two strips side by side and twist them back to back to form two spirals. Bring the tips together two by two and seal them together. Repeat with the other strips.
To finish, brush the star with a mixture of egg yolk and a tablespoon of water. Bake for about thirty minutes, checking for doneness.
