Preparation of the ingredients In a bowl, slice the potatoes into thin rounds. Season with salt and pepper. Chop the garlic, shallot, and parsley together. Add them to the potatoes. Mix.
Preparation of the dough Place a puff pastry in a tart pan. Roll it out enough to cover the edges of the pie. Fill with potatoes and sprinkle with small knobs of butter.
Assembly: Cover with three-quarters of the second puff pastry, remembering to create a vent. With the remaining pastry, prepare petals for the decoration of the pie.
Cooking: Brush the pastry with egg yolk. Bake for 40 minutes in a preheated oven at 180 °C. Before serving, remove the lid and pour fresh cream over the potatoes. Replace the lid immediately. Serve.
