Today I propose a pork curry my way. A dish inspired by Indian cuisine, well-flavored, mild, and slightly spicy at the same time. You can replace the pork with veal, beef, or chicken, as you wish.
Prepare all the ingredients. Cut the meat into small pieces. Peel and chop the onions and garlic.
Heat the oil in a pot. Add the pieces of meat and sear them for about 10 minutes.
Add the onion and garlic and cook for another 2 minutes, stirring.
Add the curry paste and spices and continue cooking for 2 minutes, stirring regularly.
Add the coconut cream and lime juice. Season with salt and pepper to taste.
Cover and cook over medium heat for about 15 minutes or until the meat is cooked.
To finish, serve immediately with basmati rice.
