A recipe for puff pastry sausages.
Preheat the oven to 200°.
Cut the sausages in half lengthwise. Slice 100 g of cheese into 12 thin slices. Grate the remaining 20 g.
Cut 12 squares from the puff pastry.
Wrap each half sausage in a thin slice of cheese. Place them on squares of puff pastry and seal the edges. Brush with egg yolk and sprinkle with golden sesame seeds and grated cheese. Space them out on a baking sheet lined with parchment paper.
Bake for 25 minutes. The puff pastry should be golden brown and the cheese should be well melted.
Make the sauce: Whisk the egg yolk with the mustard in a bowl. Gradually add the oil. Salt and pepper to taste.
To finish, serve the puff pastries on a large serving platter with a bowl of sauce in the middle. Garnish with sprigs of chervil.
