A bold but successful combination! A lovely discovery to share without hesitation.
Dust the ray wing pieces with flour. Then season with salt and pepper (otherwise the salt will draw out moisture). Quickly brown them in butter and oil. Finish cooking for 5 minutes in an oven at 200°C. Meanwhile, discard the cooking fat, add a piece of butter back into the pan and let it brown. Add the capers and a tablespoon of vinegar from the capers, scraping the bottom of the pan, and pour the sauce over the ray pieces.
