Preheat the oven to 240°C, grill setting.
Wash the zucchini, trim the ends, and slice the zucchini lengthwise using a mandoline.
Place on a baking sheet lined with parchment paper.
Brush the zucchini slices with oil using a pastry brush, sprinkle with thyme, and season with salt and pepper on both sides of the zucchini slices.
Bake for 10 minutes on each side (20 minutes total).
To finish, drizzle some olive oil over the zucchini. Serve hot.
