Blend the polenta until it forms a thick puree. In a deep skillet, heat the frying oil.
Place the starch in the first bowl, the plant-based cream in the second bowl, and the breadcrumbs in the third bowl.
By hand, shape the balls from the pureed polenta, while inserting a cube of mozzarella in the center of each.
To finish, coat each ball in starch, then in cream, and finally in breadcrumbs. Dip the resulting balls in frying oil for 2 minutes, until they are golden brown. Drain on paper towels and serve hot.
