Chocolate mass
 3 Egg yolk
 75 Semolina sugar
 40 Fresh cream
 50 Flour
 5 Baking powder
 25 Melted butter
 10 Cocoa powder
 30 Chocolate chips
White mass
 10 Egg yolk
 260 Sugar
 140 Sour cream
 200 Flour
 1 Baking powder
 3 Liquid vanilla
 75 Cold melted butter
 1 clove Vanilla

Chocolate mixture: Lightly blanch the egg yolks and sugar. Add the cream. Then incorporate the flour, sift with the baking powder and cocoa. Finish the mixture by adding the butter (60°C) and the chocolate chips. Store.

White mixture: Lightly beat the egg yolks and sugar. Add the cream and vanilla. Then incorporate the flour. Sift in the baking powder. Finish the mixture by folding in the butter (60°C). Store.

To finish Assembly: Put a layer of white batter that completely covers the bottom, a layer of black batter in the middle, and repeat once. Finish with a white batter, about 400 g of mixture per mold. Cooking time 1 hour 5 minutes at 140°C. Store.
