Wash the vegetables and peel the sweet potato. Cut it into large pieces and dice the eggplant and tomato into large cubes.
Chop the onion, garlic, and chili.
Prepare the meat by removing the fattier pieces. Cut the meat into large cubes.
In a pot, sauté the onion, garlic, and chili with olive oil.
Add the meat and lightly brown it.
Meanwhile, prepare the broth. Using a whisk, mix the broth with the peanut butter. Heat it gently for a few minutes.
Add the diced tomato, tomato purée, and broth to the meat. Cover and let simmer on low heat for about 30 minutes.
Meanwhile, bring a large pot of water to a boil. Cook the millet for about 20 minutes. Drain.
To finish, when the meat is cooked, add the eggplant and sweet potato. Cover and continue cooking for 20 minutes.
