An ultra-simple, light, and pleasant recipe for a meal with friends or family. Easy to prepare, this recipe combines the tenderness of tenderloin with the mild flavors of coconut milk and the spicy notes of curry.
Cut the meat into large cubes. Peel and finely chop the garlic and onion. Grate the ginger root.
In a heavy-bottomed pot, sauté the garlic and onion for 5 minutes with olive oil. Then add the meat, allowing it to brown on all sides. Add the broth cube, dissolving it in 100 ml of very hot water. Let it sit for 5 minutes.
Pour the curry, broth, coconut milk, and grated ginger into the pot. Season and cover. Let simmer for 1 hour on very low heat.
At the end of cooking, add fresh cilantro and crushed cashews.
To finish, enjoy with white rice.
