 100 Greek yogurt
 15 Cinnamon
 5 Baking powder

In a mixing bowl, mash 2 bananas (get the kids involved for this step!). Crack the eggs one by one, then add Greek yogurt, 4 tablespoons of milk, and ½ packet of cinnamon or to taste, and mix well.

Add ½ packet of yeast and a pinch of salt, then add 175 g of flour and mix again until you achieve a thick and homogeneous texture. Cover with plastic wrap or a cloth and let the dough rest for at least 15 minutes.

Meanwhile, remove the zest from the lemon using a fine grater, and then cut it into slices. Cut the apple into thin half-moons, and then place them in a bowl of water to prevent them from browning. Pat dry with paper towels just before serving.

Heat butter in a large skillet over medium heat. Once the skillet is hot, pour in about ½ ladle (adjust the amount of batter based on the size of the pancakes you want). Involve the kids if you wish! Cook the pancake for 2-3 minutes on each side. Repeat the process until all the batter is used up.

To finish, once the pancakes are ready, serve them on a large plate. Add the apple slices on top along with some zest and lemon slices. You can squeeze a few drops of lemon juice over the entire dish if you like.
