A recipe for a fresh herb broth with yogurt and radishes created by a Belgian star chef. A recipe that is very quick to prepare. Photo credit: Heikki Verdurme.
To prepare the herb broth, blend the spinach, herbs, ice, and water in a blender. Strain through a sieve and adjust the seasoning with vinegar and herbs. Finish with salad oil.
For the preparation of Greek yogurt, adjust the seasoning of the yogurt to your taste and pour it into a piping bag.
Cut the radishes into various shapes and season them with sea salt, fresh lime zest, olive oil, pepper, and honey vinegar. Arrange them in a shallow bowl, place the yogurt among the radishes, and pour the broth alongside.
To finish, add some croutons and fresh herbs, along with edible flowers.
