Ingredients
 300 Green lentils
 4 Sausage (Toulouse or Montbéliard type)
 3 Vinegar
 2 Carrot
 1 Onion
 3 Clove
 1 Herb bundle
 1 Leek greens

Preparation of the ingredients Place the salted meat in a sieve, which is placed in a pot, and fill with cold water. Soak for 2 hours to remove excess salt.

Put the lentils in cold water, as soon as it boils, stop the cooking. Let it rest for 1 hour.

Cooking Drain the meat and place it in a pot filled with water along with the onion studded with cloves and the bouquet garni (to which you have tied the green part of the leek). Cook over low heat for 30 minutes.

Simmer Add the carrots to the meat and continue cooking for 20 minutes. After 20 minutes, add your sausages and let cook for another 10 minutes.

Drain the lentils, cover them with hot water, and cook for 10 minutes. Drain again. In a bowl, place 3 ladles of the cooking liquid from the meat: add salt, pepper, and vinegar. Pour this mixture into the lentils. Serve your drained meat on the lentils.
