A delicious cheesecake with cherry sauce! Perfect for summer.

Ingredients
 300 Speculoos
 100 Unsalted butter
 300 cherries
 50 sugar
 500 white cheese
 6 gelatin sheets
 100 powdered sugar
Directions

Crush the biscuits and mix them with the melted butter. Place everything at the bottom of a mold. Refrigerate!

Remove the pits from the cherries. Cook them with 50g of sugar for 10 minutes. Then blend everything and set aside in the refrigerator.

Soak the gelatin sheets in a bowl of cold water to soften.

Beat the cream cheese with the powdered sugar. Set aside in the refrigerator.

Take some cherry sauce and heat it to dissolve the gelatin sheets. Pour it into the mixture with the remaining sauce. Mix well!

To finish, pour everything into the mold and refrigerate for a few hours or overnight before enjoying it!
