For the pancakes
 50 Sugar
 3 Egg
 50 Milk
 80 Semi-salted butter
 1 Optional rum
For the salted butter caramel
 180 Sugar
 110 Semi-salted butter
 ¼ Salt
 1 Water ingredient
 20 Thick sour cream

Prepare the caramel: combine sugar, butter, salt, and water in a saucepan. Cook over low heat, stirring constantly with a wooden spoon until caramelized.

When the caramel reaches a nice color, remove the saucepan from the heat and gradually add the cream. Let it cool to room temperature so that the caramel retains its creaminess.

Prepare the crepes: In a mixing bowl, combine the gluten-free flour blend with the sugar.

In the meantime, beat the eggs and mix with the milk. Incorporate into the previous mixture. Finally, add the melted butter and rum.

Heat a non-stick pan and lightly oil it. Pour a ladle of batter into the pan, spread it out, and wait for it to cook on one side before flipping it. Cook all the pancakes this way over low heat. Serve with salted caramel.
