Indulge in this recipe for a vegetarian burger with falafels, fresh vegetables, and tahini sauce.
Preparation of the sauce: place the tahini in a small bowl and add a few tablespoons of water to achieve a smooth and homogeneous sauce.
Peel the garlic clove and finely chop it. Squeeze the lemon and add it all to the tahini. Add a teaspoon of olive oil, salt, and pepper to taste. Mix everything together.
Cut the vegetables into thin slices and set aside. Peel the red onion and cut it into thin slices.
Preparation of falafel patties: in a food processor, grind the chickpeas, tahini, olive oil, and finely chopped onion. Add ½ teaspoon of cumin, curry, salt, and pepper.
Sear the steaks for 3 minutes on each side in a well-oiled pan. Do the same with the burger buns.
Thoroughly wash the lettuce, mint, and parsley, then finely chop the fresh herbs.
Assemble each burger by placing a patty on a base of sauce, then add the vegetables, red onion, two leaves of lettuce, and a few fresh herbs.
Finally, drizzle olive oil over everything, then replace the top of each bread and serve immediately.
