Coarsely crush the cinnamon sticks in a mortar. In a saucepan, bring the milk to a simmer.
Remove from heat, add the cinnamon, cover, and let steep for 15 minutes.
In a pitcher, whisk the egg yolks with the brown sugar and rum. Gradually pour in the filtered milk without stopping the whisking.
To finish, divide into cups and sprinkle with a little ground cinnamon and some attractive cinnamon sticks before serving hot.
