Do you only have one egg in the fridge and are craving pancakes? Here is a successful recipe for about half a dozen pancakes with just one egg. Don't deprive yourself at snack time or on special occasions; you can work wonders with just one egg!
Mix the flour and salt.
Add the egg yolk. Mix.
Add the oil. Mix.
Gradually add the milk while mixing.
Let it rest for 1 hour.
Whip the egg white until stiff and gently fold it into the batter.
Grease the frying pan with a little butter and heat it up.
To finish, pour a ladle of batter and cover the entire pan with it. Cook for about 1 minute. Flip and cook for about another 30 seconds. Proceed in the same way for all the crepes.
