Today, I propose to you light, airy, and fluffy waffles, subtly flavored with vanilla and cinnamon. A basic recipe that is easy to make, using simple ingredients. It’s also a quick recipe since the batter does not require resting or rising time, but in the end, you get a superb result. You can serve them with the topping of your choice.
In a bowl, beat the egg whites until stiff peaks form with the sugar and salt.
In another large bowl, blend the milk with the egg yolks, oil, and vanilla.
In a separate bowl, mix the flour, baking powder, and cinnamon. Sift into the first mixture, then blend until a smooth texture is achieved. Be sure to scrape the sides of the bowl well.
Finally, carefully fold in the egg whites using a spatula in three additions.
Cook the waffles in the hot waffle maker until they are nicely golden brown.
To finish, serve immediately with the accompaniment of your choice (powdered sugar and chocolate sauce for me).
