This cucumber gazpacho is super refreshing! Serve it very cold as a starter, at a drink, or whenever you feel the need for freshness!

Gazpacho
 1 Cucumber
 6 Mint
 5 Lemon (its juice)
 Black pepper
Gaspacho garnish

Clean the cucumber and cut it into cubes... You can peel it and remove the seeds if you prefer, but then you will need 2 cucumbers...

Put the diced cucumber in a blender with the mint leaves and the juice of half a lemon. Add pepper. Blend everything until you have a smooth mixture... Adjust the seasoning if necessary.

To finish, pour the mixture into small bowls and place them in the fridge. Before serving, garnish with pieces of cherry tomatoes, diced cucumber, slices of lemon, and mint leaves.
