This recipe for crispy sardine pastries is presented by a culinary expert.
Preheat the oven to 210 °C (gas mark 7).
Remove the sheets of pastry from their paper backing and cut strips that are about the same length as the sardines (approximately 7cm).
Open the can of sardines, separate the fillets, and remove the central bone from each of them.
Take a strip of pastry and at one end place a sardine fillet, skin side down. Add about a teaspoon of tapenade on the flesh side of the sardine fillet. Then roll the sardine along the entire length of the strip.
Repeat the process for each sardine.
Finally, place the crispy bites on a baking sheet lined with parchment paper and bake for about 10 minutes until golden. Enjoy immediately.
