In a pan, heat the olive oil, add the arugula, garlic, and adjust the seasoning. Let cook for 2 minutes and drain.
Let cool and chop the arugula lightly with a knife.
In a bowl, mix the arugula and feta cheese.
Roll out the pasta and brush it with egg whites. Place a little filling of arugula and feta on top, then fold to form the ravioli like a pastry.
Heat a deep fryer to about 200 degrees and immerse the dumplings. Once they are crispy, drain them and serve immediately.
