Peas and mint: it's always a delicious pairing, as long as you know how to balance the flavors. A tasty soup, a waste-reducing recipe... I must say I will make this recipe again the next time I buy fresh peas!

Preparation of the vegetables. Peel the potato and cut it into small cubes. Peel the onion and chop it. Rinse the pea pods and cut them into pieces (I removed the ends).
Cooking the vegetables Melt the butter in a large pot and sauté the chopped onion. Add the potato and the pea pods. Add the chopped mint, then the cubes of homemade vegetable broth. Season with salt and pepper. Cover with water. Bring to a boil and let cook for 30 minutes.
Finalizing the soup and plating. Blend for a sufficient amount of time, then strain the mixture to remove any fibers. Mix well. Serve with croutons and a small spoonful of thick cream.
