Wash and rinse all the vegetables.
Reserve 50 g of chestnuts for decoration.
Sweat the sliced leek whites in butter. Add the chicken stock. Wait for it to boil before adding the potatoes and chestnuts.
Cook for 30 minutes at a gentle simmer. Add the cream, blend, and adjust the seasoning.
To finish, add the crumbled chestnuts and garnish with the herb leaves.
