Open the coconut in half and remove the brown part using a peeler. Cut the flesh into pieces and blend finely. Spread it on a tray lined with parchment paper and bake for 1 hour at 100°C.
In a shallow dish, pour in the egg whites, 150 g of shredded coconut, powdered sugar, and condensed milk. Whisk until you achieve a fairly firm consistency.
Divide the batter into small silicone molds shaped like half spheres and bake for 20 minutes in a preheated oven at 120°C.
