Enjoy these Cider Crepes. Normand-style crepes.
Start by preparing the pancake batter. Place the flour, sugar, and salt in a bowl. Make a well, add the eggs, and mix. Then add the melted butter and the milk gradually while mixing to avoid lumps. Finally, gently add the cider and mix as you go. Let the batter rest for at least an hour.
Cook the crepes. Grease a 25 cm diameter pan with absorbent paper soaked in sunflower oil. Heat over high heat. Once the pan is hot, pour in the batter using a ladle so that it covers the entire surface of the pan. Add more if necessary. Cook for 1 minute on each side. Repeat this until there is no batter left.
To finish, serve with whatever you like (spread, sugar, jam, or like me, caramel)!
