 100 Thick sour cream

Preparation of the "truffle mixture." With the given proportions, you can make about 40 truffles. Melt the chocolate in a double boiler with the sugar and cream. When the mixture is smooth and well combined, stir in the egg yolks vigorously. Let it cool slightly, then place it in the refrigerator.

Preparation of truffles. Take the dough out of the refrigerator. Take the equivalent of a large teaspoon. Gather the dough with your fingertips to give it an initial shape, then roll it between the palms of your hands.
