The Easter nest is a soft chocolate cake decorated with small chocolate eggs. A traditional recipe to enjoy with family or friends. Here’s how to make a mini Easter nest using a mixer.
Prepare the chocolate sponge cake. Pour the softened butter, sugar, vanilla, salt, and eggs into the mixing bowl and mix for 20 seconds, speed 3. Add the melted chocolate and milk and mix again for 10 seconds, speed 10. Finally, add the flour and baking powder and mix for 30 seconds, speed 3.
Pour the chocolate sponge mixture into small greased and floured muffin molds and bake in a preheated oven at 180°C for 18 minutes. Allow to cool and unmold.
Prepare the chocolate ganache. Blend the melted chocolate for 10 seconds at speed 10. Add the liquid cream and heat for 4 minutes at 50°C, speed 3. Add the butter and heat for 1 minute at 50°C, speed 3. Let cool to room temperature.
Finally, cover the cakes with ganache. Place in the refrigerator for 10 minutes. Before serving, decorate with small chocolate eggs.
