An ultra-delicious recipe to make 15 chickpea falafels stuffed with cheese. A treat for appetizers!
Soak the dried chickpeas in a bowl filled with cold water for at least 12 hours. After that, drain and dry them.
Peel and chop the onion and fresh herbs. In a blender, place the chopped onion, herbs, and all the ingredients except the cheese cubes.
Mix everything until you obtain a sandy texture. Then, using a scoop, form balls and make a small hole in each ball to insert a cube of cheese, then close it.
Place each ball on a baking sheet lined with parchment paper. Sprinkle with sesame seeds and drizzle with 2 tablespoons of olive oil.
Bake for 20 minutes at 190° C in convection and grill mode. Watch the cooking carefully to avoid overcooking.
To finish, serve with a small yogurt sauce with mint and garlic.
