Today I offer you a stew made with chicken, bell peppers, and olives that smells like the South and brings sunshine to the plates. It’s a balanced, light, and flavorful dish that my family really enjoyed.
Prepare the vegetables. Peel and chop the onions and garlic. Remove the seeds from the peppers and cut them into strips. Remove the seeds from the chili and chop it finely.
Cut the chicken into small pieces. Place in a bowl, add the flour and mix well to coat.
Heat a large skillet or pot with olive oil. Add the pieces of chicken and cook for about 10 minutes, stirring occasionally. The chicken pieces should be browned on all sides. Set aside on a plate.
In the skillet, add the onions and cook for 4-5 minutes, stirring regularly.
Add the garlic and peppers. Continue cooking for another 5 minutes.
Add the chicken, thyme, bay leaf, and 100 ml of water. Season with salt and pepper. Cover and let simmer on low heat for 15-20 minutes, stirring a few times.
Add the tomato pulp, olives, chili, and dried parsley. Mix and let simmer for another 10 minutes, still covered.
