This Indonesian recipe is always a big success. It is easy and quick, perfect when hosting.
Soak the skewers (if they are wooden) for 5 minutes. Cut the chicken into small pieces.
In a mixing bowl, combine all the ingredients to make a sauce and add the chicken. Allow to marinate for at least 4 hours.
Skewer the pieces of chicken onto the skewers and place them on the oven rack. Cook the remaining sauce for 2 minutes in the microwave and blend if there are any pieces left. Add a little coconut milk if needed to achieve a saucy consistency.
Preheat the oven to 180°C, if possible using a combination of heat and grill. Cook for 5 minutes, turn the skewers, and cook for another 3 minutes.
Serve the skewers with the sauce and peanuts.
