Ingredients
 400 Nests with 7 fresh eggs
 500 Chicken fillet
 2 Leek
 70 Dry white wine
 200 Sour cream
 4 Egg yolk
 Fresh parsley
 Salt
 Pepper

Wash and finely chop the leeks.

Sauté them with a little butter in a pan over medium heat. Wait 2 minutes while stirring, then add the white wine. Cover and let cook for about ten minutes.

In a large pot, bring water to a boil and cook the pasta for the indicated cooking time.

Meanwhile, slice the chicken thinly and cook it in a large pan with a bit of butter. When it starts to brown, add the leeks and the cream. Season with salt and pepper.

When the pasta is ready, add it to the large pan and mix it with the sauce over low heat.

To finish, prepare the plates, place the pasta on them, and add an egg yolk to each. Sprinkle with fresh parsley and serve.
