Score the tops of the chestnuts with a cross using a sharp knife, then cook them in a pot of boiling water for about ten minutes.
Drain them and then shell them. Once shelled, boil them again for about twenty minutes and drain them.
In the meantime, pour the water, sugar, and vanilla beans into a small saucepan, bring to a boil, then let it simmer for about ten minutes until the syrup thickens.
Blend the chestnuts, add the syrup and the fleur de sel, then continue blending for a few seconds until you achieve a smooth cream. Allow to cool completely. You can stop at this stage to enjoy a chestnut cream.
To finish, whip the liquid cream into stiff peaks and gently fold it into the chestnut cream. Divide into 6 small pots and let set in the refrigerator for 4 hours.
