Chalet soup is a comforting dish perfect for cool evenings. A very good winter soup, hearty. For once, we won’t worry about the diet! This rustic recipe combines the sweetness of potatoes and spinach with the smoky flavor of bacon. Enriched with macaroni and cheese, it's a complete meal that satisfies well. Easy to prepare, this generous soup will delight the whole family with its authentic flavors, reminiscent of the lovely aromas of old-fashioned cooking.

Ingredients
 8 Potato
 2 Large onion
 400 Spinach (which will give you 200 g once cleaned)
 150 Smoked bacon
 1 Milk (preferably whole)
 20 Thick sour cream
 150 Grated cheese (Gruyère or even better, Comté)
 50 Butter
 Salt
 Pepper

Peel the potatoes and cut them into pieces. Trim and rinse the spinach. Peel and finely slice the onions. In a large skillet, melt the butter and add the bacon and onions. Let cook for 5 minutes.

Add the spinach (don't worry about the quantity, spinach wilts quickly), then the potatoes and sauté for 10 minutes over medium to low heat. Meanwhile, bring the milk to a boil with 500 ml of water in a large pot, then add the contents of the skillet, season with salt and pepper. Cover and cook for 40 minutes.

To finish, add the macaroni and continue cooking for 10 minutes. Remove from heat, add the cream and grated cheese. Adjust the seasoning, and serve hot. Enjoy your meal!
