Focaccia preparation Preheat the oven to 200°C. Place the focaccias on a baking sheet lined with parchment paper.
Preparation of the filling: Heat a pan without any fat. Then add the slices of cured pork and sauté for at least 5 minutes. They should become slightly crispy. Set aside on a plate.
Baking Bake the focaccias for 7 – 8 minutes, then sprinkle with cheese (1 tablespoon each) and return to the oven for another minute.
Preparation of the eggs: Melt a knob of butter in a pan for 2 minutes until it foams. Gently crack 4 extra-fresh eggs and let them cook over medium heat for 3 minutes. The yolk should remain runny.
Serve by placing a fried egg and slices of bacon on each focaccia. Season with salt and pepper, and sprinkle a bit of pecorino. Serve while still hot, accompanied by lamb's lettuce.
