 200 Flour
 100 Buckwheat flour
 7 Eggs
 500 Milk
 30 Melted butter
 Flower of salt
 2 Truffle white ham
 40 Parmesan shavings
 5 Black truffle shavings (optional)

In a mixing bowl, combine the two flours with the eggs, milk, melted butter, and salt. Let the batter rest for one hour.

Cut the white truffle ham into small cubes. Grease a hot skillet with butter. Pour in a ladle of thick batter (1/2 cm),

Flip the pancake and crack an egg in the center. Place the diced ham and shavings of parmesan in the middle. Cover the pan with a plate to cook the egg.

Once cooked, gently remove the pancake from the pan. Cook a second pancake, then flip it while sprinkling with Parmesan cheese. Once the cheese is melted, remove the pancake from the pan and place it carefully on top of the first pancake.
