The breaded eggplant in the Airfryer is very simple and quick to make. Perfect as a starter, to share with friends or family.

Ingredients
 1 Eggplant
 125 Breadcrumbs
 2 Grated Parmesan
 1 Egg
 Sesame seeds
 Salt
 Pepper

Wash and then slice the eggplant lengthwise or widthwise if you prefer nice round slices, into pieces 1/2 cm thick.

Salt and pepper.

Mix the breadcrumbs and grated cheese.

Beat the egg.

Soak the slices of eggplant in the beaten egg and then in the mixture of breadcrumbs and cheese. Sprinkle with sesame seeds.

To finish, place the breaded eggplant slices in the basket of the air fryer and cook at 190°C for 10-15 minutes.
