A surprising recipe with a rather unusual and very flavorful coating!
Cut the hard-boiled eggs in half and remove the yolks. Place half of the yolks in a mixing bowl, add the finely chopped fish, 1 tablespoon of olive oil, 1 tablespoon of the spice blend, and chopped chives. Mix.
Stuff half an egg and close it with the other half. Cut a strip from the pastry and wrap the egg with it.
In a deep plate, place the breadcrumbs, add the sesame seeds and the spice mix. Whisk a fresh egg in a bowl, brush the hard-boiled egg coated in dough with a brush and roll it in the breadcrumbs.
To finish, heat olive oil in a pan and sauté the breaded eggs for 2 to 3 minutes to brown the breadcrumbs and give them a crispy texture. Complete the cooking in the oven for 15 minutes at 180°C.
