Cranberry compote. Cook the cranberries with sugar and maple syrup over heat.
In a bowl, whisk the eggs. Place the breadcrumbs in another bowl, season with salt and pepper, and mix. Roll each cheese in flour. Then dip them in the beaten eggs. Roll them in the breadcrumbs afterward. Repeat the process a second time.
To finish, melt the butter in a hot skillet, then sear the breaded cheeses to crisp the breadcrumb coating. Cook on low heat for 2 minutes on each side until they are golden brown. Serve immediately with a green salad and a cranberry compote.
