Preparation of the financier batter Preheat the oven to 180°C (356°F). Pour the flour, powdered sugar, and almond flour into a mixing bowl and mix.
Melt the butter.
Pour the egg whites and a pinch of salt into a large bowl. Whip them until stiff peaks form. Gently fold them into the mixture using a spatula.
Pour the melted butter into the bowl while mixing.
Lightly grease the financier molds (this is not necessary if they are silicone). Pour the batter into the molds, filling them two-thirds full.
Baking Place the pastries in a hot oven and let them cook for about 8 minutes. They will gradually brown. Remove them from the mold as soon as they come out of the oven and let them cool on a rack.
