Basbousa is a Middle Eastern pastry made from fine semolina and almonds, traditionally served during Ramadan evenings. It is enjoyed with family or friends, accompanied by mint tea.

Cake
 250 Fine semolina
 100 Almond powder
 60 Sugar
 2 Egg
 100 Butter
 1 Yogurt
 20 Orange flower water
 1 pinch Salt
Syrup
 250 Sugar
 200 Water
 20 Orange blossom water
Decor
 Toasted sliced almonds

Prepare the syrup: in a saucepan, pour in the sugar, water, and orange blossom water, and heat while stirring until you obtain a slightly thick syrup. Set aside.

Prepare the cake: in the mixing bowl, blend the flour, semolina, sugar, eggs, yogurt, and baking powder for 15 seconds on speed 5.

Pour the mixture into a rectangular dish and bake for 25 minutes at 180°C.

To finish, pour the syrup over the cake as it comes out of the oven, cut into squares, and add a piece of toasted flaked almond on each slice. Serve cold.
