Preheat the oven to 150°C (300°F). Remove the rind from the cheese, then cut it into slices and finally into cubes. Distribute it with the cream into two ramekins. Bake for 15 minutes, stirring occasionally to ensure the cheese melts evenly.
Cut the ham into strips and, out of the oven, add them to the cheese and cream mixture. Break two eggs per dish. Season with salt (I don't add salt, the cheese and ham take care of that), pepper, then bake for 5 minutes.
Upon removing from the oven, sprinkle each ramekin with a pinch of chili powder and garnish with washed and chopped chives. Serve hot with fresh or toasted bread.
