Asparagus flan with parmesan, a light and simple appetizer to enjoy in spring.

 600 Frozen green asparagus
 2 Chives
 50 Grated parmesan
 4 Egg
 Salt, pepper

Preheat the oven to 150°C (300°F). Cook the green asparagus for 8 minutes in boiling water. Drain them. Set aside the tips for decoration.

Blend the remaining asparagus with the light cream, add the Parmesan, the beaten eggs, season very lightly with salt, pepper, and fold in the chives.

Pour the mixture into 6 well-buttered small ramekins and bake for 40 minutes in the oven, in a water bath.

To finish, let cool in a water bath, unmold, and serve with hollandaise sauce and asparagus tips.

    Extra There's absolutely nothing to say, but I made it for 8 people with the quantities given. In fact, I froze some since there are only 4 of us. A very fine dish, and since I have other guests coming, I will make it again. Thank you. My suggestion: Instead of parmesan, I used a different type of cheese.

    Very easy, quick, and very good recipe I have made it several times and my guests really enjoyed it. My suggestion: I tried serving the custards cold and warm: we preferred them warm.

    Excellent This dish is always a hit! Not only is it delicious, but the preparation is super quick. My suggestion: I use green asparagus from a jar. Instead of asparagus tips for decoration, I use small whole green asparagus.

    Too much stringiness Did I make a mistake? After cooking the frozen asparagus, I put them in my blender. The mixture became stringy, and the final result was unappetizing. Thank you for your response.
