Here is a recipe for artichoke soup with croutons. Recipe created in partnership with a kitchen appliance.
Cut the artichoke bottoms into pieces. Peel and rinse the potatoes, then cut them into pieces.
Peel and cut the onion into quarters.
Put the onion in the bowl. Set for 5 seconds / speed 6.
Scrape the sides, pour in a drizzle of oil. Set for 5 minutes / 100°C / speed 1 without the lid.
Add the artichokes, potatoes, broth, salt, and pepper. Set for 30 minutes / 95°C / speed 1 / INV.
At the end of cooking, add the cream and blend for 45 seconds at speed 8.
Finally, divide the artichoke cream into bowls. Sprinkle the top with croutons, thyme leaves, and chopped tarragon. Serve immediately. Tip: Use natural canned artichoke bottoms or frozen bottoms that you will let thaw beforehand.
